Is a heritage turkey good to eat?

Duh! So much better than styrofoam supermarket turkey - prepare to be amazed.

This is the rich, flavourful bird your Grandma served in the 40's and 50's. The BSW is a heritage improved breed, faster growing than the surviving exhibition breeds with a high meat to bone ratio, heavier breast and clean picking white feathering.

They are neither tough nor gamy, as the unimproved breeds can be, and don't need their breasts shot full of broth and canola oil to be moist, like the commercial breed does. They do benefit from lower temperatures for roasting, and because of their natural fat content, they seem to take noticably less time to cook.
